HAY: Minimalist Style At Lisbon’s Prado Restaurant
Prado, a new farm-to-table restaurant located in downtown Lisbon, chose a selection of chairs from HAY’s J series to complement its light, informal space. Distinguished by its organic, minimalist style and approach to food, the restaurant has a vision that is matched by the chairs’ timeless aesthetic and the simple warmth of wood.
Housed in a former fish factory – complete with soaring ceilings, lush greenery and Roman ruins on display – Prado (‘Meadow’) is led by talented young chef António Galapito. Having returned to take up the post following a stint working with Nuno Mendes in London, Galapito’s menus are a celebration of farm-to-table eating (hispi cabbage, goat’s cheese whey and walnuts; cockles, spinach coriander and fried bread; and Iberico pork loin with chard). The wine list, comprising organic, biodynamic varieties, is also worthy of attention, as are the decadent, Instagram-friendly desserts.
The concept for the menu and the design came from the building itself, an abandoned early 19th-century factory which made candied fruit, preserves and biscuits. Left derelict for 20 years, verdant vegetation had wrapped itself around the pulley system, hanging down from the high ceilings. From this, the idea of Prado – which translates as Meadow – was born, and local outfit Ark Studio designed an urban restaurant which brims with the feel of a pastoral paradise. Endless greenery hangs from the ceilings and cascades from the high window sills over white-washed walls which are trimmed with sage-green wooden shutters and wood panelling- also echoed in the napkins and uniforms.
