The Fiery Italian: A Guide to Your Ultimate Culinary Love Affair

 I’ve always loved a home alive with the smells and flavours of freshly cooked food; inviting aromas that make every corner feel warm and lived-in. One of my favourite ways to achieve this is with a pizza oven right in your kitchen or entertainment area. I have two current favourites from Signi Fires, a Cape Town-based manufacturer of braais, pizza ovens, fireplaces and fire pits.

The Cucina Wood-Burning and Nuovo Gas Pizza Ovens are beautifully designed, sturdy, and practical. You can even move the Nuovo (which doesn’t have a chimney) indoors if the weather turns bad. The Cucina offers the romance of wood-fired cooking, while the Nuovo is quick, clean, and convenient with its gas burner. Either way, you’ll have a focal point that is both attractive and enjoyable to cook with.

Now, let’s get a little hands-on. I’d like to share my go-to pizza dough recipe. It’s simple, requiring just four ingredients, and promises a crisp yet chewy base that everyone dreams about.

 Mix 425 g of cold water with 19.5 g of sea salt, stir in 65 g of 00 flour (super-finely milled Italian white flour, essential for achieving the perfect texture), and then add 0.5 g of yeast. Finally, add the remaining flour (654 g) and mix well. Knead for 15 minutes, then shape into a ball. Place it in an oiled bowl and lightly brush the top with oil. Cover and let rise for 24 hours. Divide into five balls, rest for 2–4 hours, and stretch by hand (never roll it). Preheat your oven to 450°C, and bake the dough on a hot stone. Finally, watch the magic happen.

This is where the fun really starts. Toppings are your playground! Signi Fires staff favourites run the gamut from bacon, feta, and avocado to classic tomato and mozzarella, or more adventurous choices like Puttanesca with olives, capers, and anchovies. The beauty of homemade pizza is that it’s completely yours to shape, stack, and relish as you like. Stretch out the dough, layer on your favourites, breathe in that irresistible aroma, and let the first bite be a little celebration. Even better, enjoy it with friends over a bottle of good wine.
