Franke: Make Your Own Spinach Pie

It’s time to shuffle your shopping list and embrace some cold weather cooking ideas! Warm body and soul with this gorgeous Spinach pie thanks to Franke.

This simple, elegant and delicious Spinach Pie is great served as a starter, for lunch or even as a main served with whole wheat or white dinner rolls and a delicious smoothie!

It’s also the perfect way to serve up spinach – one of the most nutrient-rich vegetables loaded with essential vitamins and minerals!

• Difficulty: medium
• Temperature: 180°C
• Cooking Time: 30 minutes

Ingredients

• 50 gr Breadcrumbs
• 50 gr Butter
• 2 Eggs
• 100 gr Grana cheese or Parmesan
• 3 gr Nutmeg
• 50 gr Pine nuts
• 500 gr Spinach
• 50 gr Sultanas
• Salt and Pepper

Preparation:

Step 1:
Bring a large pot of salted water to a boil. Add spinach, and cook just until wilted, about 1 minute. Remove from the pot and drain in a colander. Try to squeeze out as much liquid as possible and cut the spinach into smaller pieces.

Step 2:
Place the spinach in a bowl, add the beaten egg, sultanas, pine nuts, cheese and a sprinkling of nutmeg; add salt and pepper to taste.

Step 3:
Mix carefully and place the mixture in a buttered oven dish. Sprinkle with breadcrumbs and dot with a few knobs of butter and place in the oven at 180°C for 30 minutes.
