Franke – A Comforting Menu for You and Your Loved One!

From soup to casseroles, winter time calls for hearty and sustaining meals to keep you warm, and that’s what this menu from Franke is all about… just in time for the cooler months ahead.

Zucchinis Stuffed With Cheese

Ingredients

  • 50 gr Butter
  • 4 Zucchinis / Courgettes
  • 50 gr Grated Parmigiano-Reggiano cheese
  • 50 gr Pecorino cheese
  • 50 gr Provolone cheese
  • Salt and Pepper

Preparation

Step 1

Select medium-sized zucchinis (all the same size if possible), cut off the ends of each one and wash. Cut them in half length-wise and gently scoop out some of the pulp.

Step 2

In a bowl, lightly mix together the butter with the grated Parmigiano-Reggiano and Pecorino cheese; dice the Provolone.

Step 3

Spread a layer of the cheese and butter mixture on each courgette and sprinkle the diced Provolone on top.

Step 4

Arrange the courgettes in rows in an oven dish and place in the oven at 180°C for 30 minutes.

Lasagne with Meat Sauce

Ingredients

  • 50 gr Butter
  • 50 gr Flour
  • 50 gr Grated Parmigiano-Reggiano cheese
  • 400 gr Lasagne noodles
  • 320 gr Milk
  • 180 gr Mixed minced meat
  • Nutmeg
  • Salt and Pepper

Preparation

Step 1

Boil a few lasagne sheets at a time in plenty of salted water, drain and leave to dry on a slightly damp dish cloth; take care not to overlap the sheets.

Step 2

In the meantime prepare the Béchamel sauce with the butter, flour and milk; add nutmeg and salt to taste and then mix with the minced meat.

Step 3

Butter an oven dish and spread a little Béchamel sauce and meat mixture over the bottom, then alternate layers of lasagne with the Béchamel and grated Parmigiano-Reggiano.

Step 4

Finish with a layer of Béchamel and top with knobs of butter and a sprinkling of Parmigiano-Reggiano. Place in the oven at 180°C for 40 minutes

Apple Pie

Ingredients

  • 500 gr Apples
  • 2 Eggs
  • 100 gr Flour
  • 1 Lemon zest
  • 55 gr Milk
  • 1 sachet Raising flour
  • 80 gr Sugar
  • 140 gr Whipped cream

Preparation

Step 1

Mix the egg yolks with the sugar, and then add the flour a little at a time with a few drops of milk to keep the mixture soft. Mix in the raising flour dissolved in half a glass of warm milk, the grated lemon zest and then finally the whisked egg whites.

Step 2

Pour the mixture into a buttered oven dish and arrange the peeled thinly sliced apples on top. Sprinkle with sugar and dot with a few knobs of butter then place in the oven at 180°C for 48 minutes.

Step 3

When cooled, cover evenly with a layer of whipped cream.
