The healthiest pizza ever

This almost raw pizza, as created by food-blogger Sonja Beute from Raw Road, is 100% guilt free, not to mention delicious. This “everyone friendly” meal takes a little longer to prepare but is worth the extra effort. Have fun preparing a personalised pizza that suits your preferred taste by mixing and matching your favourite ingredients. Pizza’s never tasted so fresh.

INGREDIENTS Pizza base: ½ cup oat bran 1 cup stone-ground whole wheat flour ½ cup ground flax seeds ½ cup sunflower seeds 7g dry yeast 1 ½ tsp salt 1 tsp coriander seeds 1 tsp cumin seeds 1 tsp honey 1 Tbsp olive oil ± ½ cup spring water   Tomato sauce: 1 small onion 2 large tomatoes ½ cup fresh coriander ½ cup fresh parsley 3 Tbsp honey 1 tsp salt Black pepper A few drops of Tabasco sauce 1 Tbsp whole grain mustard 2 Tbsp olive oil 3 Tbsp apple cider vinegar ½ tsp ground cinnamon 8 dates, softened in boiling water 2 tsp cumin seeds 3 Tbsp tomato sauce
Toppings: 1 packet olives, pitted 1 red pepper, sliced 2 pineapple rings, cubed 8 spinach leaves, washed and finely sliced 3 large tomatoes, sliced 2 avos, sliced 1 cup fresh rocket Pinch salt and black pepper Zest from 1 lemon 2 spring onions, sliced, optional Deactivated yeast, optional 1 cup lentil/mung bean sprouts, optional Pinch chili flakes, optional
METHOD Base: Place all the dry ingredients into a food processor. Blitz together until the sunflower, coriander and cumin seeds are slightly ground. Add the rest of the ingredients and process until the mixture comes together, forming a ball. Allow the processor to ‘knead’ the dough for a few minutes on a slow speed. The dough should be quite firm. Allow to rest for 10 minutes, then divide into four portions and roll each one into a thin round. Bake at 80° C (yes, I know it’s low) for approx. 40 minutes, or until the base will hold its shape when you gently pick it up. Tomato sauce: Place all the ingredients into a food processor or blender and process/blend until the sauce is fairly smooth. Taste for seasoning, and adjust until you find it delicious. To serve: Spoon the tomato sauce over the pizza bases and pile on the toppings. Enjoy! Recipe via
