Raw lentil stew

This deliciously nutritious recipe was created by food-blogger Sonja Beute of Raw Road. As healthy as it is tasty, enjoy a portion of raw lentil stew for lunch or a light dinner. It’s easy, quick and oh-so-satisfying Not only that but this yummy meal contains apple cider vinegar which does wonders for your lymphatic system, helping to break up mucous throughout the body and cleanse the lymph nodes. Plus, it’s rich in natural enzymes which help your body deal with Candida. Apple cider vinegar is also known to assist in detox-ing and is said to aid weight loss to boot.

Ingredients Juice from 1 lemon 1 T apple cider vinegar 1 tomato, chopped ½ onion, chopped Salt and pepper to taste 1/2 T whole grain mustard Drizzle olive oil 1/2 t cinnamon 1 t coriander seeds 1 t turmeric 2 T mixed seaweed 1 t chilli flakes ½ t cumin 1 small carrot, grated 2 medium spinach leaves, finely sliced 2 T raisins 1 cup soaked (overnight) lentils

Method Place all the ingredients, except for the carrot, spinach, raisins and soaked lentils, into a blender/food processor and blend until smooth. Mix with the rest of the ingredients and serve. Enjoy! Recipe source.
