This creamy raw broccoli and coriander soup is an absolute must-try.*Makes enough for 1 portion Ingredients ¼ cup cashew nuts, soaked in water overnight ¼ pistachio nuts, soaked in water overnight 60g broccoli, roughly chopped 1 leek, washed and chopped 1 tsp deactivated yeast 1 tsp whole grain mustard Juice from 1 lemon 1 tsp coconut oil Pinch of salt and black pepper Pinch chili flakes, optional 1 small garlic clove, skin removed ½ tsp Spirulina, optional 2 Tbsp chopped fresh coriander ¼ cup sauerkraut 1 cup boiling spring water Garnish (optional) Some chiffonaded leek A little deactivated yeast Broccoli sprouts Broccoli floret tops Pinch chili flakes Method Drain your soaked cashews and pistachios, place them along with all your other soup ingredients into a blender. Blend on high-speed for 5 – 10 minutes, ensuring that your soup is smooth and velvety. Pour into a serving bowl, top with your garnish (if you wish to decorate your soup), and enjoy!
