CHICKEN & PLUMS soy sauce Oven Roast

Errida du Toit shares her festive special dish with us. A tempting Roast Crispy chicken thighs with sweet plums and tangy soy sauce. This recipe  is so delicious and easy to make can be served with potatoes or rice. This  recipe goes down a treat at the Christmas table!


Serves 4

8 chicken thighs with the skin on

1 E sunflower oil

2-3 red chillies, cut into halves, remove seeds and cut into 1 inch strips

4 cloves garlic, chopped

5 cm fresh ginger, thinly slices

8 plums, cut in half and remove seeds

3-5 E soy sauce

For serving: fresh cilantro (optional)

Heat the oven to 200 ° C. Place the chicken on a baking sheet, drizzle with oil, season with salt and pepper and roast for 30 minutes. Turn the chicken pieces a few times to as it bakes. Scatter the chilli, garlic and fresh ginger on the grill pan – ensuring that the chicken comes into contact with the seasoning, and lay under the chicken pieces. Timetable for another 10 minutes. Place the pruimhelftes the chicken pieces and sprinkle over the soy sauce. Roast for 15 minutes until the plums are soft. Sprinkle fresh coriander. This delicious cake will eat only with rice or noodles.
