There’s only one secret to the perfect baked goods: a generous portion of love. In light of World Baking Day, why not show the ones you love how much you care? Spoil friends and family with a delicious endorphin-rich cake to elevate moods this weekend? Besides, it’s the perfect excuse to indulge.
For the cake:
1. Grease and line a round baking tin (23cm / 9 inches). 2. Preheat the oven to 170 °C / 340 °F / Gas Mark 4. 3. Place the margarine and sugar in a mixing bowl and beat until light and fluffy. Beat in eggs, one at a time and fold in remaining ingredients. 4. Place the mixture in in the prepared tin and bake on the middle shelf of the oven for 1 hour 10 minutes or until a skewer inserted in the middle of the cake comes out clean. 5. Turn out and cool on a wire tray. For the syrup: 1. Place sugar and lime juice in a pan over moderate heat and stir until sugar has dissolved. Bring to the boil and then pour over warm cake. For the filling: 1. Place margarine, sugar and milk together in a bowl and beat together until smooth. 2. Cut cake into 3 and sandwich together with icing and mango puree. For the topping: 1. Make a glace icing by adding either lime juice or water to the icing sugar until a thick pouring consistency and spread over the cake. 2. Decorate with a mix of seeds, mango, coconut and almonds.
