Yummy yoghurt ice lollies

Warm, sunny days are perfect for refreshingly fruity ice lollies. Relive your childhood memories by creating this age-old treat with a milky twist. Yoghurt-infused lollies are sweet, succulent and healthy too. They’re a definite must-have for Spring time. Screen Shot 2014-09-29 at 11.13.12 *Recipe makes 12-16 lollies, depending on size of mould. INGREDIENTS ● 125g strawberries, stalks removed ● Juice of ½ a lemon ● 4tsp Illovo icing sugar, sifted ● 1 medium mango, all flesh removed ● 4 kiwis, halved and flesh scooped out with a teaspoon ● 450g carton Greek Yoghurt ● Ice lolly moulds ● Ice lolly sticks METHOD 1 Place the strawberries in a blender with ½tsp lemon juice and 1½tsp icing sugar and whizz to a purée. Put the mixture into a sieve set over a bowl and, using the back of a ladle, push the purée through the sieve, discarding the seeds. Put this mixture into a bowl and reserve. 2 Now place the mango in the blender, this time adding 1tsp lemon juice and 1tsp icing sugar. Again, sieve with the back of a ladle into a bowl and reserve. Purée the kiwi with no lemon juice but with 1½tsp Illovo icing sugar. 3 Check the kiwi for taste and add more sugar if needed. Do not sieve the kiwi purée. Spoon a layer of fruit purée into the lolly moulds, about a quarter full, and then add a layer of yoghurt. Add another layer of fruit purée and a final layer of yoghurt.
