Sweet Pickled Mangoes

We are dreaming of sitting on a deserted tropical Island, eating these sweet mango treats and dissolving our minds into an oblivion. Well we cant be on an Island, so we have decided to bring the Island to our kitchen with these Sweet Pickled Mangoes. Indulge in the healthy sweet and savoury Island inspired dish. Here is how to make them using Illovo White Sugar…


Sweet Pickled Mangoes


+/- 25 green mangoes, chopped

20ml salt

25ml cumin powder

12ml coriander powder

40ml pickle masala

75ml mustard powder

125ml maizena

1 cup Illovo White Sugar

½ bottle vinegar

1 cup sunflower oil

2tsp mustard seeds

6 green chillies, chopped

5 cloves of garlic, crushed

3 stems curry leaves


  1. Place chopped mangoes in a bowl. Add salt, cumin, coriander and pickle masala and coat well.
  2. Mix mustard powder, maizena and sugar with vinegar. Bring to the boil over low heat, stirring constantly to avoid lumps forming. Remove from heat.
  3. Heat oil, add mustard seeds, green chillies, garlic and curry leaves. Stir well to combine and heat through.
  4. Add sauce and oil mixture to mangoes and mix well.
  5. Cool, bottle and store, ready to eat.
