Pumpkin fritters

The holiday festive season always calls for some top notch sweet treats, and we’ve found one that will be just perfect at the Christmas table or even just as a sneaky dessert. These pumpkin fritters (pumpoenkoekies) are absolutely delightful and indulgent; especially when warmed up and served with crunchy cinnamon sugar! This side dish or desert is easy to make and definitely one for the books. Check out huiskok’s variation and other ways of creating this gorgeous treat!

500 ml of cooked mashed pumpkin

60 g (half a cup) flour

5 ml (1 t) baking powder

Pinch of salt

2 eggs, beaten

Little milk

Cinnamon Sugar

Mix the pumpkin, flour, baking powder and salt, add egg and milk to make a runny batter. Heat fat or oil in a pan and spoon the pumpkin batter in it. Fry both sides until brown, drain on paper and sprinkle with cinnamon sugar. Serve immediately with lemon wedges.
