Almond & coconut granola

Almond & coconut granola so sweet, crunchy, and easy to make! Coconut for richness and crunch, and almond extracts for flavor.

200g jumbo oats 75g blanched almonds 50g desiccated coconut (shredded, dried coconut) 50g each sunflower and pumpkin seeds 25g each sesame and linseeds 3 tbsp sunflower oil 4 tbsp maple syrup 75g raisins


Preheat the oven to 180°C. Place the oats, almonds, coconut and seeds in a bowl. Whisk together the oil, maple syrup and 2 tbsp water. Stir into the oats and seeds. Spread the mixture onto a large baking tray, and bake in the oven for 30-40 minutes until golden, stirring 1-2 times during cooking. Allow to cool, then stir in the raisins. Store in an airtight jar. Serve with milk, yoghurt and fresh berries or banana.
