Christmas time is often filled with love, laughter, great food and enjoying time with friends and family. It can take months planning the perfect Christmas eve dinner and desert is, without a doubt, a highlight. We love sharing old recipes and meaningful together. The below Vinegar Pudding recipe comes from Frans Alexander who’s great grandmother Mala was a formidable woman and she could cook and bake the most delicious Christmas dinners. Frans has added a little secret that makes this pudding a real star. Serve hot with homemade custard. Below is the recipe of this special treat.
On the stove bring to a boil then turn off and set aside:
- 500ml Brown Sugar
- 1 liter water
- 2 Table Sp Vinegar
- 1 Tsp Cinnamon
- Ingredients for pudding
- 250ml Butter
- 250ml Brown Sugar
- 2 Eggs
Mix all together until creamy. Add the following to the mixture sifted.
- 750ml Cake Flour
- 4 Tsp Ginger Powder
- 2 Tsp Cinnamon
- 2 Tsp Salt
- In a separate bowl mix
- 2 tsp Baking Soda to 500ml Milk and mix well then add to pudding mixture.
- Add 3 Tbl Sp Apricot to pudding mixture and mix well.
Set oven to 180 degrees fan top and bottom heat. In a large oven proof bowl, first add the sauce then add the pudding mixture DO NOT mix.
Place in oven for 60min. The secret is when the pudding has been in the oven for an hour you make a caramel sauce!
- 2 table spoons butter
- 125ml Castor Sugar or Brown Sugar
- 250ml FRESH Cream Room Temperature
Add the sugar and the butter into a non-stick pan on low to medium heat and let the sugar melt. Once it’s melted add the cream and bring to a simmer.
Remove and pour over the pudding. Stick a knife into the pudding allowing the sauce to steep.
Place the pudding in the oven for a further 20min and thereafter turn the oven off and leave the pudding in the oven until it’s time to serve.
